[CxT] Roasting Company was established in 2016 in Peoria, IL by siblings Mitchell, Kelly and Tristan. The family-owned roastery has a mission to roast great coffee, exploring the vast origins and adventures inherent in the coffee industry.
Their name, pronounced: "see-ex-tee" is an acronym for "Coffee by Tristan". Tristan is COO and Roastmaster at [CxT] Roasting Company, Certified Level II by the Specialty Coffee Association. The brackets used in their name represent their mission statement - to make coffee as great as it can be. In writing, square brackets indicate the author has modified a text to provide clarification or context. In a similar fashion, Tristan modifies the flavor profile to give context to the roast. By doing so, he effectively "brackets" the coffee.
