Tuesday Brew Day: T.M. Ward Coffee Co.

This week for Tuesday Brew Day, we shook things up and brought out the Polished Silver Cup-One to brew up a perfect cup of Silk Signature Blend from T.M. Ward Coffee Co.  

They consider this delicious blend “the white tablecloth of all coffees”. Combining Sumatra Mandheling and Kenya AA, the beans are roasted to the darker end of medium, or Full City level. It’s a deep, dark, smooth roast that sips perfectly in the cold, blustery days of autumn.  

The extended roasting time for this Full City roast intensifies the unique qualities of the coffee beans. Darker than a Vienna roast, but lighter than a French roast, this is a coffee that has been roasted to the brink of “second crack”, which means the beans are mostly dry with subtle patches of oil. This roast mutes some degree of the acidity of green coffee and provides body and depth.
